The mornings and evenings have become cooler, and I’m craving warm teas and hot soups. My Pinterest board has lots of yummy recipes I’d like to try, so this challenge wouldn’t be complete without testing one out.
This Irish Beef Stew sounded savory and delicious, so the kids and I cooked it up last night. I’m not going to put the recipe here since we didn’t really change anything, but you can click the link to find it. We doubled it for our family. Plus, we baked up some gluten free bread to have with it.
Side Note: the butter amount was left out of the ingredients, so we used a whole stick. I would have used half if I didn’t double it. We didn’t use drought either because I don’t have any, and I’m not familiar with it.
Results: Look at that steam coming off of there. Mmmm. The aroma is heavenly, and the taste flavorful. The only change we might make next time is to drop the amount of broth to make it more of a chunky stew. Now to go eat some left overs.
By the way, I’ve decided to not do this challenge on the weekends. My posts for 31 Days of…will be Monday through Fridays only. I need the down time with my family. Plus, I’m getting ready for my second 5K this coming Saturday. Yay!
